Ingredients
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsweetened applesauce
- 1/2 cup plain Greek yogurt
- 1/4 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat oven to 350°F. Grease a 9-inch cake pan.
- In a large bowl, whisk together the flours, oats, sugars, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the applesauce, yogurt, oil, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the blueberries.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
