Ingredients
- 2 salmon fillets
- 1 cup breadcrumbs
- 1/2 cup flour
- 2 eggs, beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon dried oregano
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the potatoes into thick chips and place them in a bowl.
- Drizzle the olive oil over the chips and sprinkle with paprika, garlic powder, onion powder, dried thyme, dried rosemary, and dried oregano. Toss to coat evenly.
- Spread the chips out on a baking sheet and bake for 30-35 minutes, or until golden and crispy.
- While the chips are baking, prepare the salmon. Season the salmon fillets with salt and black pepper.
- Dip each salmon fillet into the beaten eggs, then coat with breadcrumbs.
- Heat a large frying pan over medium heat and add a drizzle of olive oil.
- Place the breaded salmon fillets in the pan and cook for 3-4 minutes on each side, or until golden brown and cooked through.
- Serve the breaded salmon with the homemade chips and enjoy!
