Ingredients

  • 2 salmon fillets
  • 1 cup breadcrumbs
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried oregano

Instructions

  • Preheat the oven to 400°F (200°C).
  • Slice the potatoes into thick chips and place them in a bowl.
  • Drizzle the olive oil over the chips and sprinkle with paprika, garlic powder, onion powder, dried thyme, dried rosemary, and dried oregano. Toss to coat evenly.
  • Spread the chips out on a baking sheet and bake for 30-35 minutes, or until golden and crispy.
  • While the chips are baking, prepare the salmon. Season the salmon fillets with salt and black pepper.
  • Dip each salmon fillet into the beaten eggs, then coat with breadcrumbs.
  • Heat a large frying pan over medium heat and add a drizzle of olive oil.
  • Place the breaded salmon fillets in the pan and cook for 3-4 minutes on each side, or until golden brown and cooked through.
  • Serve the breaded salmon with the homemade chips and enjoy!
