Ingredients

  • 2 ripe avocados
  • 2 medium tomatoes
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 cup panko breadcrumbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tbsp honey
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 cups mixed greens

Instructions

  • Preheat the oven to 400°F.
  • Cut the avocados in half and remove the pit. Cut each half into 4 slices.
  • Slice the tomatoes into wedges.
  • Place the flour in a shallow dish.
  • In another shallow dish, beat the eggs.
  • In a third shallow dish, mix together the panko breadcrumbs, salt, and pepper.
  • Dredge each avocado slice in the flour, shaking off any excess.
  • Dip the avocado slices in the beaten eggs, then coat them in the breadcrumb mixture.
  • Place the breaded avocado slices on a baking sheet lined with parchment paper.
  • Drizzle the olive oil over the avocado slices.
  • Bake for 15-20 minutes, or until the avocado slices are golden brown and crispy.
  • While the avocado slices are baking, make the lemon dressing by whisking together the lemon juice, honey, garlic powder, onion powder, oregano, basil, salt, and pepper.
