Ingredients
- 2 ripe avocados
- 2 medium tomatoes
- 1/2 cup all-purpose flour
- 2 eggs
- 1 cup panko breadcrumbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tbsp honey
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp dried oregano
- 1/4 tsp dried basil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 4 cups mixed greens
Instructions
- Preheat the oven to 400°F.
- Cut the avocados in half and remove the pit. Cut each half into 4 slices.
- Slice the tomatoes into wedges.
- Place the flour in a shallow dish.
- In another shallow dish, beat the eggs.
- In a third shallow dish, mix together the panko breadcrumbs, salt, and pepper.
- Dredge each avocado slice in the flour, shaking off any excess.
- Dip the avocado slices in the beaten eggs, then coat them in the breadcrumb mixture.
- Place the breaded avocado slices on a baking sheet lined with parchment paper.
- Drizzle the olive oil over the avocado slices.
- Bake for 15-20 minutes, or until the avocado slices are golden brown and crispy.
- While the avocado slices are baking, make the lemon dressing by whisking together the lemon juice, honey, garlic powder, onion powder, oregano, basil, salt, and pepper.
- In a large bowl, toss together the mixed greens, tomato wedges, and lemon dressing.
