About this recipe

Experience a modern take on the classic Ukrainian borsch. This hearty soup combines beets, cabbage, potatoes, and a blend of spices for a comforting meal perfect for any occasion. Finished with fresh dill and optional sour cream, it's a vibrant dish that'll brighten any table.

Ingredients

  • 4 medium beets, peeled and julienned
  • 1 small head of cabbage, thinly sliced
  • 4 medium potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh dill, chopped
  • 1/4 cup sour cream (optional)

Directions

  1. 1

Heat olive oil in a large pot over medium heat.

  2. 2

Sauté onion and garlic until softened.

  3. 3

Add beets, cabbage, potatoes, carrots, broth, diced tomatoes, and tomato paste.

  4. 4

Stir in bay leaf, thyme, paprika, salt, and pepper.

  5. 5

Bring to a boil, reduce heat and simmer for 30-40 minutes, until vegetables are tender.

  6. 6

Remove bay leaf and sprinkle with fresh dill.

  7. 7

Serve hot with a dollop of sour cream if desired.

Chef's tip

Ensure to julienne the beets and slice the cabbage uniformly for best texture and presentation. The optional sour cream adds richness but can be omitted for a vegan version.
