Ingredients

  • 4 medium beets, peeled and chopped
  • 1 small head of cabbage, chopped
  • 4 medium potatoes, peeled and chopped
  • 2 carrots, peeled and chopped
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 6 cups of vegetable or chicken broth
  • 1 can of diced tomatoes
  • 1 tablespoon of tomato paste
  • 1 bay leaf
  • 1 teaspoon of dried thyme
  • 1 teaspoon of paprika
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 cup of chopped fresh dill
  • 1/4 cup of sour cream (optional)

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the onion and garlic and sauté until softened.
  • Add the beets, cabbage, potatoes, carrots, broth, diced tomatoes, tomato paste, bay leaf, thyme, paprika, salt, and pepper.
  • Bring to a boil, then reduce the heat and simmer for 30-40 minutes, or until the vegetables are tender.
  • Remove the bay leaf and stir in the chopped dill.
  • Serve hot, with a dollop of sour cream if desired.
