Ingredients
- 4 medium beets, peeled and chopped
- 1 small head of cabbage, chopped
- 4 medium potatoes, peeled and chopped
- 2 carrots, peeled and chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 6 cups of vegetable or chicken broth
- 1 can of diced tomatoes
- 1 tablespoon of tomato paste
- 1 bay leaf
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 cup of chopped fresh dill
- 1/4 cup of sour cream (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic and sauté until softened.
- Add the beets, cabbage, potatoes, carrots, broth, diced tomatoes, tomato paste, bay leaf, thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce the heat and simmer for 30-40 minutes, or until the vegetables are tender.
- Remove the bay leaf and stir in the chopped dill.
- Serve hot, with a dollop of sour cream if desired.
