Ingredients

  • 2 cups basmati rice
  • 2 lbs chicken, cut into pieces
  • 1 cup plain yogurt
  • 1 large onion, thinly sliced
  • 1 medium tomato, chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 cup fresh mint leaves, chopped
  • 1/2 cup fresh cilantro leaves, chopped
  • 1/2 cup fried onions
  • 1/2 cup golden raisins
  • 1/2 cup cashew nuts
  • 1/2 cup ghee or clarified butter
  • Salt to taste

Directions

    Rinse the basmati rice under cold water until clear, then soak in water for 30 minutes.

    Heat ghee in a large pot over medium heat, sauté onions until golden brown.

    Add chicken pieces and brown on all sides.

    Stir in ginger paste, garlic paste, and cook for 2 minutes.

    Mix in cumin, coriander, garam masala, turmeric, red chili powder, and salt. Stir well.
