- 150 grams pancetta, finely minced
- 1 onion, finely chopped
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 1 cup passata
- 1/2 cup red wine
- 1 cup whole milk
- 1 liter chicken broth
- Salt and pepper to taste
- 500 grams fresh Tagliatelle
- Grated Parmesan cheese, for serving
