Ingredients

  • 300 grams ground beef
  • 300 grams ground pork
  • 150 grams pancetta, finely minced
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 1 cup passata
  • 1/2 cup red wine
  • 1 cup whole milk
  • 1 liter chicken broth
  • Salt and pepper to taste
  • 500 grams fresh Tagliatelle
  • Grated Parmesan cheese, for serving

Directions

    In a large Dutch oven, render the pancetta over medium heat until crispy.
