Ingredients

  • 1 block firm tofu, pressed and cubed
  • 2 heads bok choy, chopped (separate stems and leaves)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon cornstarch
  • 1/4 cup vegetable broth
  • 1 tablespoon rice vinegar
  • 1 teaspoon brown sugar
  • Salt and pepper to taste

Directions

    Press the tofu to remove excess water, then cut into cubes.
