Ingredients
- 1 lb bok choy
- 1 red bell pepper
- 1 yellow onion
- 2 cloves garlic
- 1 tbsp vegetable oil
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp cornstarch
- 1/4 cup water
Instructions
- Wash and chop the bok choy into bite-sized pieces.
- Slice the red bell pepper and yellow onion into thin strips.
- Mince the garlic.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the garlic and stir for 30 seconds.
- Add the red bell pepper and yellow onion and stir for 2-3 minutes, until slightly softened.
- Add the bok choy and stir for another 2-3 minutes, until wilted.
- In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, and water.
- Pour the sauce over the vegetables and stir for 1-2 minutes, until the sauce thickens and coats the vegetables.
