Ingredients
- 1 head of broccoli, cut into florets
- 1 head of cauliflower, cut into florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 avocado, diced
- 4 oz salami, sliced
- 1/2 cup Greek yoghurt
- 1 tbsp olive oil
- 1 tbsp honey
- 1 tbsp Dijon mustard
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper, to taste
Instructions
- Bring a large pot of salted water to a boil.
- Add the broccoli and cauliflower florets and cook for 3-4 minutes, or until tender.
- Drain the vegetables and rinse with cold water to stop the cooking process.
- In a small bowl, whisk together the Greek yoghurt, olive oil, honey, Dijon mustard, paprika, cayenne pepper, salt, and pepper to make the dressing.
- In a large bowl, combine the boiled vegetables, sliced bell peppers, diced avocado, and sliced salami.
- Drizzle the dressing over the salad and toss to coat.
- Serve immediately and enjoy!
