Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup blue raspberry puree
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F. Line a muffin tin with cupcake liners.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla extract.
  • Add dry ingredients to wet ingredients in three parts, alternating with milk and blue raspberry puree. Mix until just combined.
  • Fill cupcake liners 2/3 full with batter. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
