- 4 large bell peppers
- 1 lb ground turkey
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp olive oil
- Salt and pepper to taste

Slice the tops off the bell peppers and remove seeds and membranes. Place peppers upside down in a large pot of boiling water for 5 minutes, then remove and set aside.

Mix in the cooked quinoa, black beans, diced tomatoes, cumin, chili powder, salt, and pepper to the skillet with turkey. Stir until well combined.

Stuff each bell pepper with the turkey-quinoa mixture and place them upright in a baking dish.

Cover the dish with foil and bake for 20 minutes. Remove foil, top with cheese, and bake uncovered for another 5-10 minutes until cheese is melted.
