About this recipe

Discover the joy of cooking with this modern take on stuffed bell peppers, filled with hearty quinoa, lean ground turkey, and a blend of aromatic spices. This nutritious meal is perfect for a family dinner, offering bold flavors and vibrant colors that create a feast for the senses.

Ingredients

  • 4 large bell peppers
  • 1 lb ground turkey
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp olive oil
  • Salt and pepper to taste

Directions

  1. 1

Preheat the oven to 375°F (190°C).

  2. 2

Slice the tops off the bell peppers and remove seeds and membranes. Place peppers upside down in a large pot of boiling water for 5 minutes, then remove and set aside.

  3. 3

Heat olive oil in a skillet over medium heat. Cook the ground turkey until no longer pink, about 5-7 minutes.

  4. 4

Mix in the cooked quinoa, black beans, diced tomatoes, cumin, chili powder, salt, and pepper to the skillet with turkey. Stir until well combined.

  5. 5

Stuff each bell pepper with the turkey-quinoa mixture and place them upright in a baking dish.

  6. 6

Cover the dish with foil and bake for 20 minutes. Remove foil, top with cheese, and bake uncovered for another 5-10 minutes until cheese is melted.

  7. 7

Let cool for a few minutes before serving.
