Ingredients

  • 1 large beetroot, peeled and chopped
  • 1 head of cauliflower, chopped into florets
  • 2 cups of fresh spinach
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F.
  • Toss the chopped beetroot and cauliflower with 1 tablespoon of olive oil and spread them out on a baking sheet. Season with salt and pepper.
  • Roast the vegetables in the oven for 25-30 minutes, or until they are tender and slightly caramelized.
  • While the vegetables are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat.
