Ingredients
- 1 large beetroot, peeled and chopped
- 1 head of cauliflower, chopped into florets
- 2 cups of fresh spinach
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F.
- Toss the chopped beetroot and cauliflower with 1 tablespoon of olive oil and spread them out on a baking sheet. Season with salt and pepper.
- Roast the vegetables in the oven for 25-30 minutes, or until they are tender and slightly caramelized.
- While the vegetables are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
