- 4 medium-sized Yukon Gold potatoes, peeled and diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/4 cup all-purpose flour
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 1 bay leaf
- 1 cup carrots, sliced
- 1 cup peas, fresh or frozen
- 2 tbsp fresh parsley, chopped

Heat olive oil in a large Dutch oven over medium heat.

Season beef with salt and pepper, then brown on all sides. Remove and set aside.
