Ingredients

  • 1 pound lean ground beef
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 stalk celery, finely chopped
  • 1 medium carrot, finely grated
  • 1 tablespoon olive oil
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 cup red wine (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package (16 ounces) rigatoni
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Directions

  1. 1

    Preheat oven to 375°F (190°C).

  2. 2

In a large skillet, heat olive oil over medium heat. Add onion, garlic, celery, and carrots; sauté until softened.

  3. 3

Add ground beef, breaking it up as it cooks. Once browned, drain excess fat.

  4. 4

Stir in crushed tomatoes, tomato paste, basil, oregano, salt, pepper, and wine (if using). Simmer for 15 minutes to blend flavors.

  5. 5

Cook rigatoni according to package directions until al dente; drain.

  6. 6

In a greased 9x13-inch baking dish, layer half of the cooked rigatoni, half of the beef mixture, and half of the mozzarella cheese. Repeat layers.

  7. 7

    Sprinkle with Parmesan cheese.

  8. 8

Bake for 25-30 minutes, or until cheese is bubbly and golden. Let cool for 5 minutes before serving.

Chef's tip

For added depth, consider incorporating a splash of red wine into the sauce. This dish can be assembled ahead of time and baked just before serving, allowing flavors to meld beautifully.
