  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 bell peppers, sliced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and freshly ground pepper to taste
  • 8 small tortillas
  • Optional toppings: salsa, guacamole, sour cream, shredded cheese

Directions
