Ingredients

  • 1 lb. lean ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can (14.5 oz.) diced tomatoes
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1 can (15 oz.) kidney beans, drained and rinsed
  • 1 can (15 oz.) pinto beans, drained and rinsed
  • 1 can (6 oz.) tomato paste
  • 2 tbsp. chili powder
  • 1 tsp. ground cumin
  • 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 cups water

Instructions

  • In a large pot or Dutch oven, cook the ground turkey over medium heat until browned, breaking it up into small pieces as it cooks.
  • Add the onion, garlic, and bell peppers to the pot and cook until the vegetables are tender, about 5 minutes.
  • Stir in the diced tomatoes, black beans, kidney beans, pinto beans, tomato paste, chili powder, cumin, paprika, salt, and black pepper.
  • Add the water and stir to combine.
  • Bring the chili to a simmer and cook for 30-40 minutes, stirring occasionally, until the flavors have melded together and the chili has thickened to your liking.
  • Serve hot, garnished with your favorite toppings (such as shredded cheese, chopped cilantro, or diced avocado).
