Ingredients

  • 1 cup brown rice
  • 1 can of banana blossom, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 1 cup shredded carrots
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • 1 lime, cut into wedges
  • Salt and pepper to taste
  • For the dressing:
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon agave nectar
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger

Instructions

  • Cook the brown rice according to package instructions.
  • While the rice is cooking, prepare the dressing by whisking together the soy sauce, rice vinegar, agave nectar, sesame oil, garlic, and ginger in a small bowl.
  • In a large skillet over medium-high heat, sauté the red bell pepper and red onion until softened, about 5 minutes.
  • Add the banana blossom and shredded carrots to the skillet and cook for an additional 2-3 minutes.
  • Divide the cooked rice among four bowls and top with the banana blossom mixture.
  • Drizzle the dressing over the top of each bowl and sprinkle with chopped cilantro and peanuts.
  • Serve with lime wedges on the side.
