Ingredients
- 1 cup quinoa
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions
- Cook the quinoa according to package instructions.
- In a large bowl, combine the cooked quinoa, chickpeas, bell peppers, red onion, avocado, cilantro, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, honey, cumin, smoked paprika, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
