Ingredients
- 4 salmon fillets
- 1 lb brussels sprouts, trimmed and halved
- 1 head cauliflower, chopped
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup milk
- 1/4 cup grated parmesan cheese
Instructions
- Preheat the oven to 400°F.
- Place the salmon fillets on a baking sheet and season with salt and pepper.
- Bake for 12-15 minutes, or until the salmon is cooked through.
- Meanwhile, toss the brussels sprouts with 1 tbsp olive oil, garlic powder, thyme, salt, and pepper. Spread them out on a separate baking sheet and roast for 20-25 minutes, or until tender and lightly browned.
- In a large pot, bring the cauliflower to a boil in salted water. Cook for 10-12 minutes, or until tender.
- Drain the cauliflower and return it to the pot. Add the milk, parmesan cheese, 1 tbsp olive oil, salt, and pepper. Mash until smooth.
- Serve the salmon with the roasted brussels sprouts and cauliflower mash.
