Ingredients

  • 4 salmon fillets
  • 1 lb brussels sprouts, trimmed and halved
  • 1 head cauliflower, chopped
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup milk
  • 1/4 cup grated parmesan cheese

Instructions

  • Preheat the oven to 400°F.
  • Place the salmon fillets on a baking sheet and season with salt and pepper.
  • Bake for 12-15 minutes, or until the salmon is cooked through.
  • Meanwhile, toss the brussels sprouts with 1 tbsp olive oil, garlic powder, thyme, salt, and pepper. Spread them out on a separate baking sheet and roast for 20-25 minutes, or until tender and lightly browned.
  • In a large pot, bring the cauliflower to a boil in salted water. Cook for 10-12 minutes, or until tender.
  • Drain the cauliflower and return it to the pot. Add the milk, parmesan cheese, 1 tbsp olive oil, salt, and pepper. Mash until smooth.
  • Serve the salmon with the roasted brussels sprouts and cauliflower mash.
