Ingredients

  • 4 salmon fillets
  • 1 lb Brussels sprouts, trimmed and halved
  • 1 head cauliflower, chopped
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup milk or almond milk
  • 1/4 cup grated Parmesan cheese
  • 1 lemon, juiced and zested

Directions

    Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Place the salmon fillets on one side of the baking sheet. Brush with 1 tbsp olive oil, lemon juice, salt, and pepper.

    Toss Brussels sprouts with 1 tbsp olive oil, garlic powder, thyme, salt, and lemon zest. Spread on the other side of the baking sheet.

    Bake for 12-15 minutes until salmon is flaky and Brussels sprouts are golden brown.

    Boil cauliflower in salted water until tender, about 10-12 minutes.

    Drain and mash cauliflower with 1 tbsp olive oil, milk, Parmesan, and pepper until smooth.

For a dairy-free option, replace Parmesan with nutritional yeast and milk with almond milk.
