Ingredients

  • 4 salmon fillets
  • 1 lb brussels sprouts, trimmed and halved
  • 2 cups cooked brown rice
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Preheat the oven to 400°F.
  • In a large bowl, toss the brussels sprouts with 1 tbsp olive oil, garlic powder, paprika, salt, and black pepper.
  • Spread the brussels sprouts out on a baking sheet and roast for 20-25 minutes, or until tender and lightly browned.
  • Meanwhile, season the salmon fillets with salt and black pepper.
  • Heat the remaining 1 tbsp olive oil in a large oven-safe skillet over medium-high heat.
  • Add the salmon fillets to the skillet and cook for 2-3 minutes per side, or until lightly browned.
  • Transfer the skillet to the oven and bake for 8-10 minutes, or until the salmon is cooked through.
  • Serve the salmon with the roasted brussels sprouts and brown rice.
