- 4 salmon fillets
- 1 lb brussels sprouts, trimmed and halved
- 2 cups cooked brown rice
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat the oven to 400°F.
- In a large bowl, toss the brussels sprouts with 1 tbsp olive oil, garlic powder, paprika, salt, and black pepper.
- Spread the brussels sprouts out on a baking sheet and roast for 20-25 minutes, or until tender and lightly browned.
- Meanwhile, season the salmon fillets with salt and black pepper.
- Heat the remaining 1 tbsp olive oil in a large oven-safe skillet over medium-high heat.
- Add the salmon fillets to the skillet and cook for 2-3 minutes per side, or until lightly browned.
- Transfer the skillet to the oven and bake for 8-10 minutes, or until the salmon is cooked through.
- Serve the salmon with the roasted brussels sprouts and brown rice.
