Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-safe skillet, heat the olive oil over medium heat.
- Add the diced onion and minced garlic to the skillet and cook until softened, about 5 minutes.
- Add the chicken breasts to the skillet and cook until browned on both sides, about 3-4 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the rice, chicken broth, dried thyme, dried oregano, paprika, salt, and black pepper.
- Stir well to combine.
- Place the chicken breasts on top of the rice mixture.
- Cover the skillet with a lid or aluminum foil.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
- Remove from the oven and let it rest for 5 minutes before serving.
- Serve hot and enjoy!
