Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large oven-safe skillet, heat the olive oil over medium heat.
  • Add the diced onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  • Add the chicken breasts to the skillet and cook until browned on both sides, about 3-4 minutes per side.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the rice, chicken broth, dried thyme, dried oregano, paprika, salt, and black pepper.
  • Stir well to combine.
  • Place the chicken breasts on top of the rice mixture.
  • Cover the skillet with a lid or aluminum foil.
  • Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
  • Remove from the oven and let it rest for 5 minutes before serving.
