Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1 tablespoon ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 cup cooked lentils
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  • Rinse the basmati rice under cold water until the water runs clear.
  • In a medium-sized pot, bring the water to a boil and add the rinsed rice. Cook until the rice is tender and all the water has been absorbed.
  • In a separate pan, heat the ghee over medium heat. Add the cumin seeds and cook until they start to sizzle.
  • Add the turmeric powder, coriander powder, ginger paste, and garlic paste to the pan. Cook for 1-2 minutes until fragrant.
  • Add the mixed vegetables and cooked lentils to the pan. Stir well to combine.
  • Season with salt to taste and cook for an additional 5-7 minutes until the vegetables are tender.
  • Serve the Ayurvedic delight over the cooked basmati rice and garnish with fresh cilantro.
