Ingredients
- 1 cup basmati rice
- 2 cups water
- 1 tablespoon ghee
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 cup cooked lentils
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs clear.
- In a medium-sized pot, bring the water to a boil and add the rinsed rice. Cook until the rice is tender and all the water has been absorbed.
- In a separate pan, heat the ghee over medium heat. Add the cumin seeds and cook until they start to sizzle.
- Add the turmeric powder, coriander powder, ginger paste, and garlic paste to the pan. Cook for 1-2 minutes until fragrant.
- Add the mixed vegetables and cooked lentils to the pan. Stir well to combine.
- Season with salt to taste and cook for an additional 5-7 minutes until the vegetables are tender.
- Serve the Ayurvedic delight over the cooked basmati rice and garnish with fresh cilantro.
