Ingredients
- 2 large aubergines
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F.
- Cut the aubergines in half lengthwise and scoop out the flesh, leaving a 1/4-inch-thick shell.
- Chop the aubergine flesh and set aside.
- In a large skillet, sauté the onion and garlic in olive oil until softened.
- Add the chopped aubergine, red bell pepper, diced tomatoes, oregano, basil, salt, and black pepper.
- Cook for 10 minutes, stirring occasionally.
- Fill the aubergine shells with the vegetable mixture and place in a baking dish.
- Bake for 30 minutes, or until the aubergines are tender.
- Sprinkle with chopped parsley and grated Parmesan cheese before serving.
