Ingredients

  • 2 large aubergines
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese

Instructions

  • Preheat the oven to 375°F.
  • Cut the aubergines in half lengthwise and scoop out the flesh, leaving a 1/4-inch-thick shell.
  • Chop the aubergine flesh and set aside.
  • In a large skillet, sauté the onion and garlic in olive oil until softened.
  • Add the chopped aubergine, red bell pepper, diced tomatoes, oregano, basil, salt, and black pepper.
  • Cook for 10 minutes, stirring occasionally.
  • Fill the aubergine shells with the vegetable mixture and place in a baking dish.
