Ingredients

  • 2 lbs asparagus, trimmed and cut into 1-inch pieces
  • 1 cup cooked quinoa
  • 1 cup shredded cheddar cheese
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup panko breadcrumbs
  • 2 tbsp unsalted butter

Directions
