Ingredients
- 2 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, corn)
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1/2 teaspoon ginger powder
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- 2 green onions, chopped
Instructions
- Heat sesame oil in a large skillet or wok over medium heat.
- Add onions and garlic, and cook until onions are translucent.
- Add mixed vegetables and cook until they are tender.
- Push the vegetables to one side of the skillet and pour beaten eggs on the other side.
- Scramble the eggs until they are fully cooked.
- Combine the vegetables and eggs together.
- Add cooked rice to the skillet and stir well.
- Pour soy sauce over the rice and mix until everything is well coated.
- Add ginger powder and black pepper, and stir to combine.
- Cook for an additional 2-3 minutes, stirring occasionally.
- Garnish with chopped green onions before serving.
