Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ginger powder
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • 2 green onions, chopped

Instructions

  • Heat sesame oil in a large skillet or wok over medium heat.
  • Add onions and garlic, and cook until onions are translucent.
  • Add mixed vegetables and cook until they are tender.
  • Push the vegetables to one side of the skillet and pour beaten eggs on the other side.
  • Scramble the eggs until they are fully cooked.
  • Combine the vegetables and eggs together.
  • Add cooked rice to the skillet and stir well.
  • Pour soy sauce over the rice and mix until everything is well coated.
  • Add ginger powder and black pepper, and stir to combine.
  • Cook for an additional 2-3 minutes, stirring occasionally.
  • Garnish with chopped green onions before serving.
