Ingredients

  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1 cup plain flour
  • 1/2 cup brown sugar
  • 125g unsalted butter, melted
  • 2 tablespoons golden syrup
  • 1 teaspoon baking soda
  • 2 tablespoons boiling water
  • 1 cup icing sugar
  • 2 passionfruits, pulp removed

Instructions

  • Preheat your oven to 180°C (350°F) and line a square baking tin with baking paper.
  • In a large bowl, combine the rolled oats, desiccated coconut, plain flour, and brown sugar.
  • In a small saucepan, melt the butter and golden syrup together over low heat.
  • In a separate small bowl, dissolve the baking soda in boiling water.
  • Add the melted butter mixture and the baking soda mixture to the dry ingredients. Stir until well combined.
  • Press the mixture into the prepared baking tin and smooth the surface with the back of a spoon.
  • Bake for 15-20 minutes or until golden brown.
  • While the slice is baking, prepare the passionfruit icing by combining the icing sugar and passionfruit pulp in a bowl. Mix until smooth.
