- 1 cup rolled oats
- 1 cup desiccated coconut
- 1 cup plain flour
- 1/2 cup brown sugar
- 125g unsalted butter, melted
- 2 tablespoons golden syrup
- 1 teaspoon baking soda
- 2 tablespoons boiling water
- 1 cup icing sugar
- 2 passionfruits, pulp removed
Instructions
- Preheat your oven to 180°C (350°F) and line a square baking tin with baking paper.
- In a large bowl, combine the rolled oats, desiccated coconut, plain flour, and brown sugar.
- In a small saucepan, melt the butter and golden syrup together over low heat.
- In a separate small bowl, dissolve the baking soda in boiling water.
- Add the melted butter mixture and the baking soda mixture to the dry ingredients. Stir until well combined.
- Press the mixture into the prepared baking tin and smooth the surface with the back of a spoon.
- Bake for 15-20 minutes or until golden brown.
- While the slice is baking, prepare the passionfruit icing by combining the icing sugar and passionfruit pulp in a bowl. Mix until smooth.
- Once the slice has cooled, spread the passionfruit icing evenly over the top.
- Allow the icing to set before cutting the slice into squares.
