Anzac Slice with Passionfruit Icing

About this recipe

This Anzac Slice with Passionfruit Icing offers a delightful twist on the traditional Anzac biscuit. With a chewy texture packed with oats and coconut, the addition of passionfruit icing brings a fresh and vibrant finish. Perfect for a sweet snack or a casual afternoon tea.

Ingredients

  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1 cup plain flour
  • 1/2 cup brown sugar
  • 125g unsalted butter, melted
  • 2 tablespoons golden syrup
  • 1 teaspoon baking soda
  • 2 tablespoons boiling water
  • 1 cup icing sugar
  • 2 passionfruits, pulp removed

Directions

  1. 1

Preheat your oven to 180°C (350°F) and line a square baking tin with baking paper.

  2. 2

Combine the oats, coconut, flour, and sugar in a large bowl.

  3. 3

Melt butter and golden syrup in a small saucepan over low heat.

  4. 4

Dissolve baking soda in boiling water, then stir into the butter mixture.

  5. 5

Mix wet ingredients with dry ingredients until combined.

  6. 6

Press mixture evenly into prepared tin. Smooth the top.

  7. 7

Bake for 15-20 minutes until golden brown.

  8. 8

Mix icing sugar and passionfruit pulp until smooth.

  9. 9

Once cooled, spread icing over the slice and allow to set.

  10. 10

    Cut into squares and serve.

Chef's tip

Ensure the icing sets before cutting for cleaner squares. Use fresh passionfruit for the best flavor, but canned can work in a pinch.
