Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon turmeric
- 1 teaspoon ginger
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach
- 1/4 cup chopped fresh cilantro
- 1 lemon, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the turmeric, ginger, garlic powder, paprika, cayenne pepper, black pepper, and salt.
- Rub the spice mixture all over the chicken breasts.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for 2-3 minutes on each side, until browned.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
- Remove the skillet from the oven and let the chicken rest for a few minutes.
- Top the chicken with cherry tomatoes, baby spinach, chopped cilantro, and lemon slices.
