Ingredients

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup grated carrots
  • 1/4 cup honey
  • 1/4 cup unsweetened almond milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup chopped walnuts (optional)

Instructions

  • Preheat oven to 350°F.
  • In a large bowl, whisk together oat flour, protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, mix together applesauce, grated carrots, honey, almond milk, egg, and vanilla extract.
  • Add wet ingredients to dry ingredients and mix until well combined.
  • Fold in chopped walnuts, if using.
  • Spoon batter into lined muffin tin, filling each cup about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  • Let cool before serving.
