Ingredients

  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  • 1. Rinse the lentils under cold water and set aside.
  • 2. In a large pot, heat the olive oil over medium heat.
  • 3. Add the onion and garlic to the pot and sauté until fragrant.
  • 4. Add the carrots, potatoes, bell pepper, and tomatoes to the pot and cook for 5 minutes.

  • 6. Add the lentils and vegetable broth to the pot.
  • 7. Bring the stew to a boil, then reduce heat and simmer for 30 minutes or until the lentils are tender.
  • 8. Season with salt and pepper to taste.
