Ingredients
- 1 cup dried lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- 1. Rinse the lentils under cold water and set aside.
- 2. In a large pot, heat the olive oil over medium heat.
- 3. Add the onion and garlic to the pot and sauté until fragrant.
- 4. Add the carrots, potatoes, bell pepper, and tomatoes to the pot and cook for 5 minutes.
- 5. Stir in the cumin, paprika, turmeric, and cinnamon.
- 6. Add the lentils and vegetable broth to the pot.
- 7. Bring the stew to a boil, then reduce heat and simmer for 30 minutes or until the lentils are tender.
- 8. Season with salt and pepper to taste.
- 9. Serve hot and enjoy!
