Ingredients
- 1 lb albacore fish fillets
- 2 cups cooked rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, diced
- 1 cup frozen peas
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- 1. Preheat the oven to 400°F (200°C).
- 2. Place the albacore fish fillets on a baking sheet and season with salt and pepper. Bake for 15-20 minutes, or until cooked through.
- 3. In a large skillet, heat some oil over medium heat. Add the diced onion, minced garlic, bell pepper, and carrot. Cook until the vegetables are tender.
- 4. Add the cooked rice and frozen peas to the skillet. Stir in the soy sauce and sesame oil. Cook for another 5 minutes, or until the peas are heated through.
- 5. Flake the cooked albacore fish fillets and add them to the skillet. Stir gently to combine all the ingredients.
- 6. Season with salt and pepper to taste. Cook for another 2-3 minutes, or until everything is heated through.
- 7. Serve the albacore fish rice delight hot, garnished with some chopped green onions or cilantro.
