Ingredients

  • 1 lb albacore fish fillets
  • 2 cups cooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  • 1. Preheat the oven to 400°F (200°C).
  • 2. Place the albacore fish fillets on a baking sheet and season with salt and pepper. Bake for 15-20 minutes, or until cooked through.
  • 3. In a large skillet, heat some oil over medium heat. Add the diced onion, minced garlic, bell pepper, and carrot. Cook until the vegetables are tender.
  • 4. Add the cooked rice and frozen peas to the skillet. Stir in the soy sauce and sesame oil. Cook for another 5 minutes, or until the peas are heated through.
