Ingredients
- 1 large cucumber, diced
- 2 medium tomatoes, diced
- 1 small red onion, thinly sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 1/4 cup crumbled feta cheese
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon honey
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the cucumber, tomatoes, red onion, cilantro, mint, parsley, raisins, walnuts, and feta cheese.
