Ingredients

  • 2 cups whole wheat flour
  • 4 medium-sized potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Ghee or oil for cooking

Instructions

  • In a mixing bowl, combine the whole wheat flour with a pinch of salt and enough water to make a soft dough. Knead the dough well and let it rest for 15-20 minutes.
  • In a separate bowl, mix the mashed potatoes, chopped onion, green chilies, ginger-garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well to combine all the ingredients.
  • Divide the dough into small equal-sized balls. Take one ball and roll it into a small circle.
  • Place a spoonful of the potato filling in the center of the circle. Bring the edges of the circle together and seal the filling inside the dough.
  • Gently roll out the stuffed dough ball into a larger circle, taking care not to let the filling come out.
  • Heat a tawa or griddle over medium heat. Place the rolled parantha on the hot tawa and cook for a minute or until small bubbles start to appear on the surface.
  • Flip the parantha and cook the other side for another minute. Apply ghee or oil on both sides and cook until golden brown spots appear on the surface.
  • Remove the parantha from the tawa and repeat the process with the remaining dough balls and filling.
  • Serve hot with yogurt, pickle, or any chutney of your choice.
