About this recipe

Experience a healthy and colorful twist on classic noodle dishes with our Veggie Noodle Delight. Packed with fresh spiralized zucchini, crunchy bell peppers, and aromatic herbs, this recipe is both delicious and nutritious. Perfect for a quick weeknight dinner, it blends savory soy sauce with the rich taste of sesame oil, complemented by a touch of heat from red pepper flakes.

Ingredients

  • 2 medium zucchinis, spiralized
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 medium carrot, julienned
  • 1/2 cup snap peas, halved
  • 8 oz rice noodles
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp fresh garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 tsp red pepper flakes
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup roasted peanuts, chopped

Directions

  1. 1

Cook the rice noodles according to package instructions. Drain and rinse with cold water.

  2. 2

In a small bowl, whisk together soy sauce, sesame oil, garlic, ginger, and red pepper flakes. Set aside.

  3. 3

Heat a large pan over medium-high heat. Add a splash of oil.

  4. 4

Stir-fry the bell peppers, carrot, and snap peas until just tender, about 6-8 minutes.

  5. 5

Add the spiralized zucchini and toss briefly to combine with other vegetables.

  6. 6

Pour the sauce over the vegetables and add the cooked rice noodles. Toss to coat evenly.

  7. 7

Serve immediately, garnished with green onions, cilantro, and peanuts.

Chef's tip

Ensure the vegetables are not overcooked; they should remain crisp to complement the tender noodles.
