Ingredients
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup diced bell peppers
- 1/4 cup chopped cilantro
- 1 jalapeno, seeded and diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large tortillas
- 1 cup shredded cheese
- 1/4 cup sour cream
- 1/4 cup salsa
Instructions
- In a large bowl, combine cooked rice, black beans, tomatoes, red onion, bell peppers, cilantro, jalapeno, cumin, chili powder, garlic powder, salt, and black pepper. Mix well.
- Place a tortilla on a flat surface and spoon about 1/4 of the rice and bean mixture onto the center of the tortilla. Top with shredded cheese, sour cream, and salsa.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.
- Heat a large skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
- Serve hot and enjoy!
