Ingredients

  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped cilantro
  • 1 jalapeno, seeded and diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large tortillas
  • 1 cup shredded cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa

Instructions

  • In a large bowl, combine cooked rice, black beans, tomatoes, red onion, bell peppers, cilantro, jalapeno, cumin, chili powder, garlic powder, salt, and black pepper. Mix well.
  • Place a tortilla on a flat surface and spoon about 1/4 of the rice and bean mixture onto the center of the tortilla. Top with shredded cheese, sour cream, and salsa.
  • Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.
  • Heat a large skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
  • Serve hot and enjoy!
