Ingredients

  • 1 cup cooked cilantro lime rice
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped cilantro
  • 1 jalapeno, seeded and diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large tortillas
  • 1 cup shredded cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1 tablespoon olive oil

Directions

    Mix the cilantro lime rice, black beans, tomatoes, red onion, bell peppers, cilantro, jalapeno, cumin, chili powder, garlic powder, salt, and pepper in a large bowl.

    Lay a tortilla flat and add 1/4 of the mixture to the center. Top with shredded cheese, sour cream, and salsa.

    Fold the sides of the tortilla over the filling and roll it tightly from the bottom.

    Repeat with the remaining tortillas.

    Heat olive oil in a skillet over medium heat. Place burritos seam-side down and cook for 2 minutes on each side until golden brown.
