Ingredients

  • 1 cup of cooked rice
  • 1 cup of mixed vegetables (carrots, peas, corn)
  • 1/2 cup of diced tofu
  • 1/4 cup of soy sauce
  • 1 tablespoon of sesame oil
  • 1 teaspoon of minced garlic
  • 1/2 teaspoon of ginger powder
  • 1/4 teaspoon of red pepper flakes
  • Salt and pepper to taste

Instructions

  • In a microwave-safe bowl, combine the cooked rice, mixed vegetables, diced tofu, soy sauce, sesame oil, minced garlic, ginger powder, red pepper flakes, salt, and pepper.
  • Cover the bowl with a microwave-safe lid or microwave-safe plastic wrap.
  • Microwave on high for 5 minutes.
  • Remove from the microwave and stir the mixture.
  • Cover again and microwave for an additional 3 minutes, or until the vegetables are tender and the tofu is heated through.
  • Let the dish sit for a minute before serving.
