Ingredients
- 1 cup of cooked rice
- 1 cup of mixed vegetables (carrots, peas, corn)
- 1/2 cup of diced tofu
- 1/4 cup of soy sauce
- 1 tablespoon of sesame oil
- 1 teaspoon of minced garlic
- 1/2 teaspoon of ginger powder
- 1/4 teaspoon of red pepper flakes
- Salt and pepper to taste
Instructions
- In a microwave-safe bowl, combine the cooked rice, mixed vegetables, diced tofu, soy sauce, sesame oil, minced garlic, ginger powder, red pepper flakes, salt, and pepper.
- Cover the bowl with a microwave-safe lid or microwave-safe plastic wrap.
- Microwave on high for 5 minutes.
- Remove from the microwave and stir the mixture.
- Cover again and microwave for an additional 3 minutes, or until the vegetables are tender and the tofu is heated through.
- Let the dish sit for a minute before serving.
