  • 1 ripe mango, peeled and diced
  • 1/4 cup red onion, finely chopped

  • 1/4 cup vegan mayonnaise
  • 1 tbsp Thai red curry paste
  • 1 tbsp lime juice
  • Salt and pepper to taste
