- 1 can chickpeas, drained and rinsed
- 1 ripe mango, peeled and diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup vegan mayonnaise
- 1 tbsp Thai red curry paste
- 1 tbsp lime juice
- Salt and pepper to taste
- 4 slices of bread
- Lettuce leaves for serving
Instructions
- In a large bowl, mash the chickpeas with a fork until slightly chunky.
