Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 cup chopped spinach
  • 1 cup sliced mushrooms
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup nutritional yeast
  • 1 tablespoon lemon juice

Instructions

  • In a medium saucepan, bring the vegetable broth to a boil.
  • Add the quinoa and reduce heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the onion and garlic and sauté until fragrant, about 2 minutes.
  • Add the mushrooms and cook until they release their moisture and start to brown, about 5 minutes.
  • Add the diced tomatoes, spinach, oregano, salt, black pepper, and red pepper flakes. Cook for another 5 minutes, or until the spinach is wilted.
  • Stir in the cooked quinoa, nutritional yeast, and lemon juice. Cook for an additional 2 minutes, or until everything is well combined and heated through.
  • Serve hot and enjoy!
