Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1 cup sliced mushrooms
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup nutritional yeast
- 1 tablespoon lemon juice
Instructions
- In a medium saucepan, bring the vegetable broth to a boil.
- Add the quinoa and reduce heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and garlic and sauté until fragrant, about 2 minutes.
- Add the mushrooms and cook until they release their moisture and start to brown, about 5 minutes.
- Add the diced tomatoes, spinach, oregano, salt, black pepper, and red pepper flakes. Cook for another 5 minutes, or until the spinach is wilted.
- Stir in the cooked quinoa, nutritional yeast, and lemon juice. Cook for an additional 2 minutes, or until everything is well combined and heated through.
- Serve hot and enjoy!
