Ingredients

  • 1 cup quinoa, rinsed
  • 1 can chickpeas, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped almonds
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

    Cook quinoa in a pot with 2 cups of water until all water is absorbed and quinoa is fluffy.

    Spread cooked quinoa on a tray to cool.

    In a large bowl, combine cooled quinoa, chickpeas, tomatoes, cucumber, red onion, parsley, mint, and almonds.
