- 1 can of chickpeas, drained and rinsed
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1/2 cup corn kernels
- 1/2 cup black beans, drained and rinsed
- 1/2 avocado, sliced
- 1/4 cup salsa
- 1/4 cup vegan sour cream
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 4 whole wheat tortillas
Instructions
- In a large skillet, heat some oil over medium heat.
- Add the diced red onion and bell pepper, and cook until softened.
- Add the chickpeas, corn, black beans, cumin, chili powder, salt, and pepper. Cook for another 5 minutes.
