Ingredients

  • 2 cups basmati or medium-grain rice
  • 1 lb lamb or beef, cut into medium pieces
  • 2 large onions, chopped
  • 3 large carrots, cut into sticks
  • 3 cloves garlic, minced
  • 1 head of garlic, top sliced off
  • 1 tbsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp paprika
  • 1 tsp turmeric
  • 2 tsp salt, divided
  • 1/2 tsp black pepper
  • 4 cups water or broth
  • 1/4 cup vegetable oil

Directions

    Rinse the rice in cold water until clear. Soak in salted warm water for 30 minutes.

    Heat oil in a large pot over medium-high heat. Add onions and cook 5-7 minutes until browned.

    Add meat and cook 10 minutes until browned on all sides. Add carrots and cook for another 5 minutes.

    Stir in minced garlic, cumin seeds, coriander, paprika, turmeric, salt, and pepper.

    Drain rice and spread evenly over the meat mixture. Insert the garlic head in the center.

    Add water or broth, bring to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes until liquid is absorbed and rice is tender.
