Ingredients

  • 2 cups long-grain rice
  • 1 lb lamb or beef, cut into small pieces
  • 2 onions, chopped
  • 3 carrots, peeled and sliced
  • 1 bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 cups water or broth
  • 1/4 cup vegetable oil

Instructions

  • Wash the rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
  • Heat the oil in a large cast-iron pot over medium-high heat. Add the meat and cook until browned on all sides.
  • Add the onions, carrots, bell pepper, and garlic. Cook until the vegetables are soft.
  • Add the cumin, paprika, turmeric, salt, and black pepper. Stir to combine.
  • Drain the rice and add it to the pot. Stir to combine.
  • Add the water or broth and bring to a boil.
  • Reduce the heat to low and cover the pot. Cook for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
  • Fluff the rice with a fork and serve hot.
