Ingredients
- 2 cups long-grain rice
- 1 lb lamb or beef, cut into small pieces
- 2 onions, chopped
- 3 carrots, peeled and sliced
- 1 bell pepper, chopped
- 4 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp salt
- 1/2 tsp black pepper
- 3 cups water or broth
- 1/4 cup vegetable oil
Instructions
- Wash the rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
- Heat the oil in a large cast-iron pot over medium-high heat. Add the meat and cook until browned on all sides.
- Add the onions, carrots, bell pepper, and garlic. Cook until the vegetables are soft.
- Add the cumin, paprika, turmeric, salt, and black pepper. Stir to combine.
- Drain the rice and add it to the pot. Stir to combine.
- Add the water or broth and bring to a boil.
- Reduce the heat to low and cover the pot. Cook for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
- Fluff the rice with a fork and serve hot.
