Ingredients
- 2 cups basmati or medium-grain rice
- 1 lb lamb or beef, cut into medium pieces
- 2 large onions, chopped
- 3 large carrots, cut into sticks
- 3 cloves garlic, minced
- 1 head of garlic, top sliced off
- 1 tbsp cumin seeds
- 1 tsp coriander powder
- 1 tsp paprika
- 1 tsp turmeric
- 2 tsp salt, divided
- 1/2 tsp black pepper
- 4 cups water or broth
- 1/4 cup vegetable oil

Rinse the rice in cold water until clear. Soak in salted warm water for 30 minutes.

Heat oil in a large pot over medium-high heat. Add onions and cook 5-7 minutes until browned.

Add meat and cook 10 minutes until browned on all sides. Add carrots and cook for another 5 minutes.

Stir in minced garlic, cumin seeds, coriander, paprika, turmeric, salt, and pepper.

Drain rice and spread evenly over the meat mixture. Insert the garlic head in the center.
