Ingredients
- 4 large bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F.
- Cut off the tops of the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground beef over medium heat until browned, stirring occasionally.
- Add the onion, carrot, celery, and garlic to the skillet and cook until the vegetables are tender, about 5 minutes.
- Stir in the cooked rice, salt, black pepper, paprika, cayenne pepper, and diced tomatoes.

- Bake for 30 minutes, then sprinkle the shredded cheese on top of the peppers.
- Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
