Ingredients

  • 2 cups cooked white rice
  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup low-sodium chicken broth
  • 1 tsp Cajun seasoning
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Directions

    Brown the smoked sausage in a large skillet over medium heat. Remove and set aside.

    Sauté the onion, bell pepper, and garlic in the same skillet until softened.
