- 2 cups cooked white rice
- 1 lb smoked sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 tsp Cajun seasoning
- 1 tsp paprika
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- In a large skillet, cook the smoked sausage over medium heat until browned. Remove from skillet and set aside.
- In the same skillet, add the diced onion, bell pepper, and garlic. Cook until the vegetables are softened.
- Add the diced tomatoes, chicken broth, Cajun seasoning, paprika, dried thyme, dried oregano, and cayenne pepper to the skillet. Stir to combine.

- Add the cooked rice and smoked sausage back to the skillet. Stir to combine and let it cook for another 5 minutes, until heated through.
