  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup unsweetened almond milk
  • 1 tbsp apple cider vinegar
  • 1/2 cup cornmeal
  • 1/2 cup panko breadcrumbs
  • 1/4 cup vegan mayonnaise
  • 1 tbsp sriracha
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley

Instructions

  • Preheat the oven to 400°F.
  • Clean the oyster mushrooms and slice them into rings.
  • In a bowl, mix together the flour, garlic powder, paprika, salt, and black pepper.
  • In another bowl, whisk together the almond milk and apple cider vinegar.
  • In a third bowl, mix together the cornmeal and panko breadcrumbs.
  • Dip each mushroom ring into the flour mixture, then the almond milk mixture, and finally the cornmeal mixture.
  • Place the coated mushroom rings on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes, until golden brown and crispy.
  • While the mushrooms are baking, make the dipping sauce by mixing together the vegan mayonnaise, sriracha, lemon juice, and chopped parsley.
