- 1 lb oyster mushrooms
- 1 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup unsweetened almond milk
- 1 tbsp apple cider vinegar
- 1/2 cup cornmeal
- 1/2 cup panko breadcrumbs
- 1/4 cup vegan mayonnaise
- 1 tbsp sriracha
- 1 tbsp lemon juice
- 1 tbsp chopped fresh parsley
Instructions
- Preheat the oven to 400°F.
- Clean the oyster mushrooms and slice them into rings.
- In a bowl, mix together the flour, garlic powder, paprika, salt, and black pepper.
- In another bowl, whisk together the almond milk and apple cider vinegar.
- In a third bowl, mix together the cornmeal and panko breadcrumbs.
- Dip each mushroom ring into the flour mixture, then the almond milk mixture, and finally the cornmeal mixture.
- Place the coated mushroom rings on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, until golden brown and crispy.
- While the mushrooms are baking, make the dipping sauce by mixing together the vegan mayonnaise, sriracha, lemon juice, and chopped parsley.
- Serve the mushroom calamari hot with the dipping sauce on the side.
