Ingredients

  • 1 kg pork belly
  • 2 tbsp sea salt
  • 1 tbsp baking powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp freshly cracked black pepper

Directions

    Preheat oven to 220°C (425°F).

    Score the pork belly skin with a sharp knife, 1 cm apart.

    Pat the skin dry with paper towels. Optionally, refrigerate uncovered for at least 1 hour.

    Mix salt, baking powder, paprika, garlic powder, onion powder, and pepper, and rub all over the pork and into the cuts.

    Place pork on a wire rack over a baking tray, skin side up.

    Roast for 20 minutes. Lower oven to 180°C (350°F) and roast for 1 hour, until golden and crispy.

    Rest the pork for 10 minutes before slicing.
