- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon tomato paste
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped

Heat the olive oil in a large skillet over medium-high heat.

Add the chicken to the skillet and brown on all sides, about 5 minutes. Remove from skillet.

Reduce heat to medium, add onion and garlic, and cook until soft, about 3 minutes.

Add red and green bell peppers to the skillet and cook for an additional 3 minutes.

Stir in the diced tomatoes, tomato paste, smoked paprika, cumin, coriander, cayenne, salt, and black pepper. Bring to a simmer.
