Ingredients

  • 1 pound beef brisket
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 4 cups beef broth
  • 2 cups chicken broth
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sriracha sauce
  • 8 ounces rice noodles
  • 1 cup bean sprouts
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh mint, chopped
  • 1 lime, cut into wedges

Instructions

  • In a large pot, bring water to a boil. Add the beef brisket and cook for 2-3 minutes. Remove the beef from the pot and set aside.
  • In the same pot, add the onion, garlic, and ginger. Cook until fragrant, about 2 minutes.
  • Add the beef broth, chicken broth, fish sauce, soy sauce, hoisin sauce, and sriracha sauce to the pot. Bring to a simmer.
  • Slice the beef brisket into thin slices and add it back to the pot. Simmer for 1-2 hours, until the beef is tender.
  • While the beef is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
  • To serve, divide the rice noodles among bowls. Ladle the broth and beef over the noodles. Top with bean sprouts, cilantro, basil, mint, and a squeeze of lime juice.
