Ingredients
- 1 pound beef brisket
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 4 cups beef broth
- 2 cups chicken broth
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sriracha sauce
- 8 ounces rice noodles
- 1 cup bean sprouts
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh mint, chopped
- 1 lime, cut into wedges
Instructions
- In a large pot, bring water to a boil. Add the beef brisket and cook for 2-3 minutes. Remove the beef from the pot and set aside.
- In the same pot, add the onion, garlic, and ginger. Cook until fragrant, about 2 minutes.
- Add the beef broth, chicken broth, fish sauce, soy sauce, hoisin sauce, and sriracha sauce to the pot. Bring to a simmer.
- Slice the beef brisket into thin slices and add it back to the pot. Simmer for 1-2 hours, until the beef is tender.
- While the beef is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
- To serve, divide the rice noodles among bowls. Ladle the broth and beef over the noodles. Top with bean sprouts, cilantro, basil, mint, and a squeeze of lime juice.
