Ingredients

  • 1 pound beef brisket
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 cinnamon stick
  • 4 cups beef broth
  • 2 cups chicken broth
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sriracha sauce
  • 8 ounces rice noodles
  • 1 cup bean sprouts
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh mint, chopped
  • 1 lime, cut into wedges
  • Salt to taste

Directions

    Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger and sauté until fragrant, about 2 minutes.

    Add the cinnamon stick and toast for another minute to release its aroma.

    Pour in the beef broth, chicken broth, fish sauce, soy sauce, hoisin sauce, and sriracha sauce. Bring the mixture to a simmer.

    Slice the beef brisket thinly and add to the pot. Continue to simmer for 1.5 hours, or until beef is tender.

    Cook the rice noodles according to package instructions. Drain and set aside.

    Remove the cinnamon stick from the broth. Adjust seasoning with salt as needed.

    To serve, divide the rice noodles into bowls. Ladle the hot broth and beef over the noodles.
