Ingredients

  • 1 cup rose water
  • 2 cups sugar
  • 1 cup cornstarch
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 cup chopped pistachios
  • 1 cup chopped almonds

Instructions

  • In a saucepan, combine the rose water and sugar. Bring to a boil and simmer for 5 minutes.
  • In a separate bowl, mix the cornstarch and water until smooth. Slowly add the cornstarch mixture to the saucepan, stirring constantly.
  • Continue to cook over medium heat, stirring constantly, until the mixture thickens and becomes translucent.
  • Remove from heat and stir in the lemon juice.
  • Pour the mixture into a greased baking dish and let it cool to room temperature.
  • Once cooled, refrigerate for at least 2 hours or until set.
  • Cut the Persian delight into small squares and sprinkle with chopped pistachios and almonds.
  • Serve and enjoy!
