About this recipe

Persian Delight, also known as 'Raha,' is a classic confectionery treat with the delicate fragrance of rose water and the rich crunch of pistachios and almonds. This modern version simplifies the traditional process, making it accessible for home cooks ready to experiment with exotic flavors.

Ingredients

  • 1 cup rose water
  • 2 cups granulated sugar
  • 1 cup cornstarch
  • 1 cup cold water
  • 1 tablespoon fresh lemon juice
  • 1 cup pistachios, chopped
  • 1 cup almonds, chopped
  • 1/2 cup powdered sugar (for dusting)

Directions

  1. 1

Combine rose water and sugar in a saucepan; heat until sugar dissolves.

  2. 2

Mix cornstarch with cold water until smooth, then gradually combine with rose water mixture.

  3. 3

Stir constantly over medium heat until the mixture thickens and turns translucent.

  4. 4

Remove from heat, add lemon juice, and mix well.

  5. 5

Pour into a greased dish; let it cool at room temperature.

  6. 6

Refrigerate for at least 2 hours until fully set.

  7. 7

Cut into squares and dust generously with powdered sugar.

  8. 8

Sprinkle chopped pistachios and almonds on top before serving.

Chef's tip

Ensure the mixture is stirred continuously while cooking to prevent lumps. Adjust rose water to taste for more or less aromatic intensity.
