Ingredients

  • 8 ounces pasta
  • 2 chicken breasts, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Grated Parmesan cheese, for serving

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
  • Add the diced tomatoes, tomato sauce, dried basil, dried oregano, salt, and black pepper to the skillet. Stir well to combine.
  • Bring the sauce to a simmer and let it cook for 10 minutes, stirring occasionally.
  • Add the cooked chicken back to the skillet and stir to combine. Let the sauce simmer for an additional 5 minutes.
  • Serve the chicken tomato sauce over the cooked pasta. Sprinkle with grated Parmesan cheese, if desired.
