About this recipe

Experience the warmth of a heartily simmered stew crafted with the finest organic ingredients. This delightful dish combines tender beef, vibrant vegetables, and aromatic herbs for a fulfilling family meal that's both healthy and delicious.

Ingredients

  • 1 lb organic beef stew meat
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 1 cup red wine
  • 1 can organic diced tomatoes
  • 4 cups organic beef broth (low-sodium)
  • 2 tablespoons tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Directions

  1. 1

Heat olive oil in a large Dutch oven over medium heat. Brown beef in batches, ensuring all sides are seared. Remove and set aside.

  2. 2

In the same pot, add onion and garlic. Cook until softened, about 3 minutes.

  3. 3

Add carrots and celery, cook for an additional 5 minutes.

  4. 4

Pour in red wine to deglaze, scraping up any browned bits from the bottom.

  5. 5

Stir in tomato paste, then return the beef to the pot.

  6. 6

Add diced tomatoes, beef broth, thyme, rosemary, and bay leaf. Season with salt and pepper.

  7. 7

Bring to a boil, then reduce heat. Cover and simmer gently for 2 hours, or until beef is tender.

  8. 8

Remove bay leaf, adjust seasoning if needed, and serve hot.

Chef's tip

For an extra depth of flavor, try adding a splash of balsamic vinegar or Worcestershire sauce prior to serving. This stew also freezes well for future meals.
