Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 1 egg
  • 1 cup shredded cabbage
  • 1/4 cup chopped scallions
  • 1/4 cup chopped cooked bacon
  • 1/4 cup cooked shrimp
  • 1/4 cup chopped cooked octopus
  • 1/4 cup tenkasu (tempura bits)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 1/4 cup okonomiyaki sauce
  • 1/4 cup aonori (dried seaweed flakes)
  • 1/4 cup katsuobushi (dried bonito flakes)

Instructions

  • In a large bowl, whisk together flour, baking powder, and salt.
  • In a separate bowl, whisk together water and egg.
  • Add wet ingredients to dry ingredients and mix until just combined.
  • Fold in cabbage, scallions, bacon, shrimp, octopus, tempura bits, and Parmesan cheese.
  • Heat a large nonstick skillet over medium heat.
  • Add batter to skillet and spread into a circle.
  • Cook for 3-4 minutes on each side, until golden brown and cooked through.
  • Drizzle with mayonnaise and okonomiyaki sauce.
  • Sprinkle with aonori and katsuobushi.
  • Serve hot.
